 Experimental at best Mac and Cheese Bites

  • 2 cups macaroni noodles, uncooked
  • 2 tablespoons salted butter
  • 2 tablespoons all-purpose flour
  • 1/4 cup milk
  • 2 cups cheddar cheese, shredded
  • 1/4 cup Parmesan cheese
  • 2 eggs
  • 1/4 teaspoon dried Parsley, for garnish, optional

Crumb topping

  • 1/4 cup breadcrumbs
  • 2 tablespoons salted butter, melted
  • 1 tablespoon Parmesan cheese

How To Make It

  1. Preheat oven to 400 degrees Fahrenheit. Grease the muffin pan 
  2. In a medium pan, cook the macaroni according the package’s directions. Drain.  Set aside.
  3. Melt two tablespoons of butter in a saucepan over medium heat. Slowly add the flour while stirring.
  4. Stir in the milk. Stir until thick. 
  5. Add the Parmesan and cheddar cheeses and more milk as needed.
  6. Remove the cheese mixture from heat and add it to the cooked macaroni. 
  7. Stir to combine, then add the eggs and continue to stir.

I will add eggs to the Mexican Mac and Cheese and then follow this recipe.

  1. Fill the mini muffin pan with the macaroni mixture right to the top of each cup.
  2. In a small bowl, stir together the breadcrumbs, melted butter, and Parmesan cheese. Sprinkle the breadcrumbs over the mac and cheese cups.
  3. Bake the macaroni for fifteen minutes. Allow the macaroni to cool in the pan before attempting to move each cup.
  4. If the mac and cheese cups do not easily come out of the pan, then gently use a butter knife to loosen them.
  5. Serve and garnish with fresh parsley, if desired.

Ingredients

  • 7 cups popped popcorn

  • 1/4 cup butter

  • teaspoon paprika

  • 1 teaspoons lemon juice

  • 1/2 teaspoon salt (I didn't add)

  • 1/2 teaspoon garlic powder

  • 1 teaspoon onion powder (I didn't add)

  • 1/8 teaspoon cayenne pepper

  • 1/2 teaspoon chili powder

  • 1/2 cup maybe parmesan cheese

Directions

  1. Preheat the air fryer to 350 degrees F (175 degrees C). Place popped popcorn in a large roasting pan.

  2. Combine melted butter, paprika, salt, garlic powder, onion powder, and cayenne pepper in a small bowl; pour over popcorn and stir until it is somewhat evenly coated. Drip lemon juice over popcorn and sprinkle with cheese.

  3. Bake in the preheated oven for 15 minutes, stirring every 5 minutes. I added more cheese each time. Remove from the oven and cool completely. Serve immediately, or store in an airtight container for later.
